The Adolphus Hotel’s remodeled Rococo French Room is now stately but understated, no longer fussy and filled with cherubs. It’s a backdrop for chef Michael Ehlert’s interpretations of French fine-dining classics. A three- or seven-course tasting menu might include duck a l’orange, velour-textured pommes Dauphines, and a perfect clarified consommé that’s like skimmed sunshine turned into an elixir. Don’t miss the tableside Sazerac, the cheese cart, which makes the city’s others look like child’s play, and the dessert cart, a world of apothecary jars and boxes filled with bergamot marshmallows, sea salt caramels, miniature financiers, pâte de fruits, and marzipan confections.
