The key to Empire’s success is simple. They use unprocessed flour and natural starters that are a lot less aggressive and allow bread to take on different textures and tastes. Expensive ingredients include King Arthur flour, natural sea salt, Plugra butter, and Callebaut chocolate. They are the building blocks of their recipes. The wide variety of breads here include kalamata olive round, hippie health load, raisin pumpernickel, walnut scallion round, whole wheat farm, and challah. Try the jalapeño cheese loaf. It makes a great PB&J sandwich.

Sure, you know all about chocolate bunnies and eggs. But Easter also boasts the hot cross bun. Studded with dried fruit and spiced with cinnamon, cloves, or cardamom, this bun is a thing of beauty, a nifty round with its cross formed by stark white icing. Like most seasonal breads, this one has religious roots, originating with the pagans until the Christians converted them. In England, everyone eats these buns for breakfast on Good Friday. Empire Baking Co. goes deluxe with theirs, adding cranberries, apricots, and a sleek, glossy top. Don’t delay: by Easter Sunday, they’ll be gone.
