Behind Xamán Cafe is a hidden backbar where Mauricio Gallegos champions sotol, a distilled spirit native to Northern Mexico and parts of Texas. The cocktails are effortlessly sultry and balanced. Bar snacks are elevated bites of braised rabbit sopes with pitch-perfect salsas, or, if in season, stuffed squash blossoms fried and nested atop carrot purée.
