Mariel Street at Roy G’s has responded to the smashed burger trend with an “Oh, yeah? Hold my beer.” She has instituted a four-point technique to smear the patty across the cooktop to create a supernaturally thin piece of crusty artwork. Flipped and then topped with grilled onions, American cheese, and a zigzag of the house special sauce, it looks, truly, like a slice of edible stained glass.
