Platters feature pools of crema, refried beans, scrambled eggs, craggy cassava, and fudgy fried plantains; but try the revuelta pupusa, with fine, crispy chicharron in a deluge of cheese or the loroco, featuring a native Salvadoran vegetable, like spinach.
