Father and son team Gary and Blake Gordon opened Dallas’ first meadery, an ancient beverage made by fermenting honey rather than grain or grapes. Their brews—both a stable of standards and rotating seasonal—start with local Texas honey. As session meads, they contain 6 to 8 percent alcohol and are lightly carbonated, with inclusions like Texas citrus zest, raspberry, or the jalapeno and lime.
