Master sommelier James Tidwell is an affable fellow with a great palate, and his award-winning list manages to satisfy both traveling salesmen and galloping gourmets. Try the Chicken Natale, which is hardly your usual hotel chicken dish: angel hair pasta thick with slices of wild mushrooms and a garlic lemon and cream sauce topped with lightly breaded chicken, spears of asparagus, and roasted red bell peppers.

We sat by the window and looked out at the rolling lawn that sprawls in front of the stunning dining room at the Four Seasons in Las Colinas. As the sun set, we sipped a Vino Nobile di Montepulciano, Sanguineti 2005, one of the impressive wines offered by the glass. The wine program here gets all the press. Master sommelier James Tidwell is an affable fellow with a great palate, and his award-winning list manages to satisfy both traveling salesmen and galloping gourmets alike. As our starters arrived, a rabbit hopped across the grass, followed by a line of six tiny bunnies. We felt like we were out of town. For two hours, we delighted in each other’s company and shared a few of chef Katie Natale’s specialties, such as Chicken Natale. What could have been a usual hotel chicken dish was a glorious presentation of angel hair pasta thick with slices of wild mushrooms and a garlicky lemon and cream sauce topped with lightly breaded chicken, spears of asparagus, and roasted red bell peppers. Equally as colorful and tasty was the pan-roasted wild king salmon surrounded by barley mixed with spring vegetables. Service was prompt and attentive. We left refreshed and refined.
