Walking into Queso Beso feels like you’d just arrived at a very festive party. Piñatas greet you at the entrance, colorful lights adorn the ceiling, and bright, playful art liven up the walls. Part of Tim Headington’s Main Street empire, the Tex-Mex with a tropical diner vibe delivers on its titular dish: queso. The queso compuesto—white queso with chorizo, guacamole, and green onion—is reminiscent of the Bob Armstrong dip, if slightly elevated. Using the well-seasoned chips, it’s easy to make quick work of the bowl.
