The crown jewel of the remodeled Statler hotel is under the direction of Angela Hernandez (Top Knot). Dim sum is uneven, with forgettable shumai and soup dumplings, but fried prawns and lacquered chicken wings are outstanding. For $75, you can summon a whole Cantonese-style roast duck, which is sliced at your table and served with a strawberry hoisin barbecue sauce, julienned cucumbers, and pillowy mantou buns. The experience is imperative.
