In a stall tucked in the back corner of downtown’s The Exchange food hall, chef Josh Harmon slings all manner of outrageously good fried chicken, including Nashville-style hot chicken and Japanese katsu sandwiches. The secret MVP, though, is the potato salad, rich with onions and a creamy dill dressing.
