Tim Byres’ Cheese Biscuits

(Yields 8-10)

3½ cups all-purpose flour
3½ tablespoons baking powder
2½ tablespoons kosher salt
6 tablespoons granulated sugar
6 tablespoons lard
½ cup heavy cream
1 cup buttermilk
½ cup sharp cheddar, grated

Preheat oven to 400°. Sift together top three dry ingredients. Combine rest of ingredients and roll dough to ½ inch. Cut with cookie cutter and bake for eight to 10 minutes. Serve with shaved smokehouse ham (available at Smoke), watercress, and fresh honeycomb.
