1 4-rib prime rib roast
1½ tablespoons kosher salt
1½ tablespoons coarsely ground black pepper
Preheat oven to 425°. Rub the prime rib with salt and pepper. Place the seasoned prime rib in a large roasting pan. Cook for 1½ to 2 hours or until a temperature of 125° is reached. Remove the meat from the pan and allow it to rest for 30 minutes. The prime rib should be 135° or a perfect medium rare. Slice in 1-inch slices and serve.
