Chris Ward’s Cranberry Relish



(Serves 6–8)

2 bags fresh cranberries
2 cups granulated sugar
1 cup orange juice
½ cup cranberry juice
1½ tablespoon grated orange zest

Combine ingredients in a saucepan. Cook over medium heat until the berries pop open, and cook for five more minutes. Remove the scum from the surface. Cool to room temperature. Chill overnight.
