His creative menu, which changes often, might feature organic mixed greens lightly dressed with balsamic-basil vinaigrette and served with sliced mango, hard-boiled egg, and corn bread; white, flaky Gulf snapper topped with crabmeat salad; or boneless Niman ranch pork ribs.
