Gazpacho Sauce (Yields 1 quart)
4 cups fresh tomato concasse, medium dice
1 cup cucumber, peeled, seeded, medium dice
1/2 cup red onion, small dice
2 teaspoons jalapeno, minced
2 tablespoons cilantro, chopped
2 teaspoons garlic, minced
2 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon tomato paste
5 1/2 ounce can V-8 or tomato juice
1 tablespoon Sevy seasoning

Crab Salad
1 1/2 pounds jumbo lump crab (check for shell pieces)
1/2 cup celery, minced
1/4 cup red onion, minced
1/4 cup red pepper, minced
2 tablespoons capers, chopped slightly
1/2 cup mayonnaise
2 tablespoons lemon juice
2 teaspoons Sevy seasoning
1 tablespoons parsley, chopped
