Ingredients
1 cup cornmeal
½ cup Monterey Jack cheese, shredded
3/4 teaspoon salt
2 teaspoons baking powder
1 cup creamed corn
1 cup buttermilk
1 cup Canola oil
2 eggs
1 tablespoon chopped jalapeño
Pepper
Directions
Combine first four ingredients. Combine remaining ingredients in a separate bowl and then add into the dry mix. Bake in a greased 9-inch square pan at 350° for one hour.
