Gilbert Garza’s Hawaiian Sea Salt Cracker

Yields 20 pieces

Ingredients
2 cups of all-purpose flour
3 tablespoon of vegetable shortening
1-½ teaspoons baking powder
½ teaspoon of kosher salt
½ cup water
2 tablespoon of extra virgin olive oil
2 tablespoon coarse sea salt

Directions
Preheat the oven to 350°. Line a baking sheet with parchment paper. Combine the flour, shortening, baking powder, & kosher salt in a food processor. Process briefly to mix. Then, with the motor running drizzle in the water. When the dough begins to hold together, turn off the mixer. Gather up the dough and form a ball. Transfer to a lightly floured work surface. Roll out into a sheet about 1/8 inch thick, and cut into 2 by 3 inch rectangles. Place on paper pan liner and brush each piece with olive oil and sprinkle with the Hawaiian sea salt. Bake until golden brown, 12-14 minutes. Let cool and store in an airtight container.
