Chamberlain’s Fish Market Grill’s Grilled King Salmon With Lemon-Dill Butter

Serves 6

Grilled King Salmon
4 6-oz. King Salmon fillets
Sea salt and white pepper, to taste
1 oz. olive oil
4 dill sprigs

Lemon-Dill Butter
4 oz. white wine
5 oz. lemon juice
3 tbsp. butter
2 shallots, chopped
1 tsp. fresh dill, chopped

Directions for Grilled King Salmon
Preheat grill to medium high for five minutes. Season salmon fillets with salt and pepper and brush with olive oil. With cloth dipped in a little oil, wipe grill to lubricate. Place salmon on grill, and cook on each side for four. Place fish on plate and drizzle with lemon-dill butter. Garnish with dill sprig and serve.

Directions for Lemon-Dill Butter
Add white wine, lemon juice, and shallots to a saucepan over medium heat. Reduce by ¾. Whisk in butter, being careful not to boil. Remove from heat, and add chopped dill. Season with salt and pepper.
