Ingredients
Large carrot, chopped
3 spears dill pickle, chopped
Stalk of celery, chopped
½ small red onion, chopped
Handful of parsley, chopped
1 Granny Smith apple, chopped
Mayonnaise
Salt
White pepper
Directions
Blend mayonnaise to taste with salt and white pepper. Add all items including chicken. Blend of white and dark meat results in a better flavor. Taste to ensure consistency and moisture. Serve on wheat or multigrain bread with crisp lettuce and sprouts.
