Formerly known as Houston’s, Hillstone is a bit on the pricey side—$13 for a cheeseburger and at least $10 for a glass of wine—but that doesn’t seem to bother the throngs. But, as much as we hate to admit it, it’s totally worth the wait. Service is exceptional and the food is always on target. Few restaurants can pull off great prime rib—especially restaurants that don’t revolve around steak. But the slab of warm, pink, buttery beef at Hillstone is sublime.
